Secondo la tradizione potrebbe essere un’interpretazione della pasta busiata di origine araba, ottenuta con la sottile canna di una pianta, il “bus”, con cui un tempo si avvolgevano i pezzetti d’impasto.

Le Caserecce celebrano la manifattura locale e hanno una forma sfiziosa che, con le sue insenature, è perfetta per raccogliere il condimento.

Le linguine appartengono alla stessa famiglia degli spaghetti, da cui si differenziano per la sezione che, anzicchè essere cilindrica, è piatta.

In pratica è uno spaghetto schiacciato a sezione rettangolare con uno spessore medio.

Di origini meridionali i fusilli hanno una lunga storia. Originariamente venivano lavorati con una tecnica manuale tramandata di madre in figlia, che consisteva nell’arrotolare l’impasto intorno ad un ferro da calza, ottenendo così un tipo di pasta a forma di “fuso”

Molto semplice e amata da tutti, con la sua delicata forma a spirale cattura bene il condimento.

Formato tipico della Sardegna anche noto come malloreddus o cigiones, veniva preparato soprattutto in occasioni di sagre e matrimoni; per questo lo gnocchetto sardo è associato a momenti di festa, convivialità, allegria.
