Le linguine appartengono alla stessa famiglia degli spaghetti, da cui si differenziano per la sezione che, anzicchè essere cilindrica, è piatta.

In pratica è uno spaghetto schiacciato a sezione rettangolare con uno spessore medio.

Gli Spaghetti de la Molisana si presentano rigorosamente ruvidi, per via de la trafilatura al bronzo, pronti per poter assorbire perfettamente tutti i sughi e soprattutto così tenaci che praticamente non scuociono mai; Tutto ciò grazie al contenuto proteico pari al 14,5% 

Formato tipico della Sardegna anche noto come malloreddus o cigiones, veniva preparato soprattutto in occasioni di sagre e matrimoni; per questo lo gnocchetto sardo è associato a momenti di festa, convivialità, allegria.
