I tronchetti, disossati salati e frizionati a mano, sono tagli di carne provenienti da suini di sesso femminile, accuratamente selezionati.

La carne, resa morbida dal massaggio manuale, viene speziata e legata artigianalmente con lo spago per alimenti in fibra naturale.

Un prodotto piuttosto particolare ottenuto dalla cottura di un taglio particolare di carne di manzo. Si presenta compatto, del tipico marroncino delle carni rosse cotte, ideale da tagliare in fette sottilissime come alternativa ai prosciutti.
