Thawing: Defrost the product inside its casing in a refrigerator at a temperature between 0 and +2 ºC.
Mode of use: It should be placed in a pan at room temperature: leave it at least an hour outside the fridge and dry it well on both sides. The cooking plate must be hot: in this way, the so-called Maillard reaction is activated, that is the caramelization of the external part, which, in technical jargon, "closes" the meat externally leaving the inside softer.
The fire must be high and lively and the plate must not drop in temperature.
The Tagliata must be turned on both sides, because both are browned: it must not be pierced or pricked because the internal liquids do not pour out.
Before serving on the plate and slice it, wait a few minutes so that the cooking is complete outside the fire and the liquids do not disperse too soon.
